A few months back, Fidelis and I went to check out Skyve Wine Bistro. Located fairly nearby town and yet “ulu” enough that it wasn’t super overcrowded, Skyve Wine Bistro was a place we found suitable to unwind after a stressful day at work. One can tuck into a good meal, enjoy some bubbly and listen to a live band. Skyve Wine Bistro is definitely a nice place to chill in Singapore.
While the outdoor area looked pretty pleasant, I wasn’t too keen in sitting outside.
It was far too humid to sit anywhere without airconditioning.
Fidel and I decided to sit inside where comfy chairs, adequate lighting, good music and cool air was available for the overly pampered us.
We totally pigged out! Here are some of the dishes we ordered:
Appetizers:
Lychee ‘Saketini’ Granita Oyster – which was an unique blend of lychee & sake sorbet and seaweed “caviar”. I am not a huge fan of oysters in Singapore honestly. While it had a rather refreshing taste and were quite unique, I still did not like the taste of oyster. Find it a bit too fishy for my taste. But honestly, that’s just me.
So much for being on a low carb diet. This lovely appetizer Sous Vide Egg & Spaghettini was a heavenly blend of a soft poached egg, spaghettini in truffle salsa, iberico ham and truffle hollandaise. The dish was so delicious that I was scrapping the bottom of my plate for every last morsel. They should have this as a main dish instead!
Mains:
We felt like having something light and thus we had the Vegetarian Pizza which was sous Vide & Grilled seasonal vegetables, truffle salsa, arugula leaves, shaved parmesan cheese on a light thin crust. It turned out to be a huge mistake. Not because it wasn’t nice but mainly because it was extremely filling.
We tried the Asian Inspired Confit of Duck Leg, a sous vide crispy duck leg in Asian five spice, pickled fennel and orange segment salad, polenta fries, orange sauce. I was surprised at how the orange sauce went so well with the duck leg. It was uniquely seasoned with the Asian five spice but came off a bit salty for my taste. However, when you eat it with the orange sauce and salad, it helped “neutralised” the saltiness.
I really really enjoyed the Sous Vide Pork, a pork Shoulder braised in root beer and spice, savoury crackling skin, pineapple and pomegranate salsa, toragashi pepper and plum salt . I am not a health conscious person, so give me my fatty pork and skin! If you are one who does not like fatty meat, I would not encourage you to order this dish. If you love fatty meat as much as I do, go order it!!!!
Desserts:
My personal favourite desserts was the Mango & Cheese Semifreddo (first pic) which was rippled frozen mousse, Frozen lime foam, sablee cookies which gave a very refreshing taste especially after a hot humid day.
Am not a fan of coffee so I skipped the Tiramisu (second pic), a lady finger sponge infused with coffee liqueur, whipped mascarpone cream, kahlua granita. If I remembered correctly, Fidel liked this very much!
The last dessert was really something unexpected. Inspired By Reds (third pic) was a strawberry parfait, sous vide strawberry in balsamic vinegar, raspberry sorbet, flower tuile, dehydrated raspberry. It was a very pleasant dish which I heard was a hit with the ladies.
